Fanshawe College meets CAST Alimenti

A Canadian Institute visits Brescia to discover our facilities and local cuisine

A representative of Fanshawe College, a major Canadian culinary institute, visited CAST Alimenti earlier this summer to find out what the benefits of a formative period in Italy for their students may be.​

“The best way to understand how our school CAST Alimenti works and what we offer, is to come and visit the labs, to experience first-hand the teaching style and learn how Faculty can combine knowledge of raw materials, technical insights, technology, and aesthetics” – Michela Martini, Educational Offer director.

Canadian visitors have attended a confetti and teacup lesson with Chef Beppe Maffioli, a chef instructor who collaborates with our institute since the day we were born. Starting from the pumpkin, raw material at km0 (local farm-to-table), the chef has shown how it is possible to enhance this typical Italian ingredient through the use of techniques, technology, and refined dish composition.

The journey of knowledge is not limited to the classroom experience because CAST Alimenti has strong and proud ties with its nearby territory. Before entering labs, the delegation visited some prestigious production companies such as Barone Pizzini in Franciacorta wine area, Ambrosi for Grana Padano and typical Italian cheeses, and also Mori2A for professional plastic and steel equipment.

In fact, to experience Italian cuisine and tradition, you must start from the knowledge of local and classic products and traditions, but then, under the guidance of a highly experienced faculty, who works every day in close contact with the Food industry, you land on the modern side of our culture exploring to the most current trends with a perfect combination of taste, excellence, and technology.
