Viviana Varese - born in Salerno in 1974 - approaches the cuisine thanks to the family fish restaurant. Her personal and professional history then led her to leave Campania to grow, learn and train in different places (including Albereta, by Maestro Gualtiero Marchesi and El Celler De Can Roca, in Girona), until she opened in 1999 - a Orio Litta, in the Lodi area - the Girasole, her first restaurant. Then, after meeting with Sandra Ciciriello, the opening in 2007 of Alice Ristorante in Milan, which obtained the First Star of the Michelin Guide in 2011 until the transfer of the restaurant to Eataly Smeraldo, also in Milan. In May 2015 Viviana becomes chef Ambassador of Expo Milano 2015.
