Executive Pastry Chef at the Four Seasons Hotel in Florence since 2009, takes care of the entire hotel pastry shop, which boasts a starred restaurant, "Il Palagio", directed by Executive Chef Vito Mollica. He especially loves chocolate and dessert on the plate, around which he built his style and his recipes in the art of pastry making. He is specialized in processing and in chocolate sculptures and in the processing of ice cream and sorbets. For him the attention to details is fundamental for every dish, a concept he loves to convey to his collaborators that he always tries to involve. In March 2017 he received the prestigious recognition of Master of Italian Master Confectioners Academy and from 2019 he is a teacher of CAST Alimenti.
