Always a great fan of the world of Food & Beverage, Carlo De Paolis has dedicated many years to the development of his culinary knowledge, through experiences in the world of international catering working in several Michelin-starred restaurants.

After learning all the "operational" aspects, he decided to move towards the managerial side of the trade and obtained a Bachelor’s Degree in Catering Management & Culinary Arts at the prestigious Institute Paul Bocuse, to then integrate his training with a full-time Master in Food & Beverage Management at SDA Bocconi in Milan, followed by an incredible and stimulating experience as F&B Research & Development at Chef Express.

He worked with big and small activities in the scenario of Italian and international F&B.

Currently, is Business Development & Project Manager in one of the most important companies in the Italian scene of F&B, where it deals with Research and Development of new market opportunities where to start activities and create opportunities for the company.

As Project Manager he follows the creation of new formats Ho.re. Ca., the redefinition of existing concepts, the economic feasibility analysis for new projects and the analysis of income statement and balance sheet for realities already in operation, but also the search for new products and technologies to be used for specific formats.
He is consultant and teacher in some courses of CAST Alimenti, where he holds specific focus on topics such as: the formats in Italian catering, consumption and Italian consumers, catering types, characteristics of fast commercial catering, strategic delivery.
