DIDACTIC ACTIVITY


During the years, we have been successful as the most important specialisation centre in Italy in the various culinary disciplines, and the fame of this centre is consolidating now at international level, too. In its seven specialised labs, which are, technically speaking, equipped with the most advanced equipments, classes in all the main culinary disciplines are held: cuisine, pastry, bakery, pizza, ice-creamery, chocolate-manufacturing, bar-cafe.

Each year, we are offering about 250 courses divided into basic sections, professional training and great events courses, the aim of which is to allow the culinary operators to find out the latest know-how the protagonists involved in the national and international culinary world might bring forward. Starting next CAST Alimenti Academy, a three-years superior training course for an academic education. Moreover, numberless courses for groups of professionals and/or foreign connoisseurs in the Italian culinary culture are held in their original language or by making use of simultaneous translation thanks to teaching material specially set up.

Both on the occasion of great events and basic sections, as well as during specialization classes, the method we follow is that of aiming at offering whatever it is the best as regards the target the activity sets itself. It isn’t a mere chance if we have been amongst the first private training centres in the culinary field to be certified with ISO 9001:2000 for the planning and implementation of educational activities.

In order to keep its own presence constantly updated in a field of quick evolution such as the gastronomic filed is, we are involved in a series of projects and relationships, keeping in close contact with universities and many national associations, which represent the world of professionals in the food sector.

It isn’t therefore a mere chance if the I.C.S. is the Training Centre of the N.I.C. (Italian Culinary Team), and of the Italian delegations of the national pastry, gelato, bread-making teams, which take part in the various national and international contests and culinary Olympic events. CAST’s Masters have a long history, competing in international culinary competitions, winning trophies and hundreds of medals in both individual and team competitions in virtually every aspect of gastronomy, including hot and cold cuisine, patisserie, gelato, bakery and decorative food art.

The “Relais Dessert International”, the international most important pastry association in the world, has chosen us as their work seat and meeting point for their own workshops and conferences whenever these are held in Italy. Moreover, we give hospitality to: the Italian division of the Richemont Club (the most important international bakery organization), AMPI (Italian Academy of Pastry Masters), UMGA (Italian Masters of Artisan Gelato), F.I.C. (Italian Cook Federation), together with the N.I.C. (Italian Culinary Team). Considering all courses, exhibitions and meetings held by the various enterprises for the promotion of their own products, selections and trainings for national and international competitions, and other courses not listed in the programme catalogue, we can say that over 5000 professional people are attending our centres in Brescia and Lecce each year. About 1500 are those who take part yearly in the courses listed in the programme catalogue.
